The Collection

Three roes, chosen without compromise

Three roes and one tasting flight to find your way between them. Every tin ships overnight in a monitored cold chain.

Curated with restraint. Chosen without compromise.

We sell three roes rather than a catalogue, because most of what separates a good tin from a disappointing one happens in handling, not in marketing.

On choosing caviar

Caviar bought well is a simple thing.

It is fresh roe, lightly salted, kept cold from the moment it is tinned until the moment it is opened. Most of what separates a good tin from a disappointing one happens in handling, not in marketing.

Golden Osetra is the flagship, and the most complex of the three — most often served on its own, with nothing underneath it. Kaluga Reserve is the closest living relative of Beluga and the most savory expression here. Kaluga Amber is the gentlest, and simply the easiest place to start.

Compare all three

Side by side.

Grain, texture and finish — the three things worth comparing before you choose.

  Grain Texture Finish Best for
Golden Osetra Medium-large Firm pop Nutty, oceanic Served on its own
Kaluga Amber Large Soft, yielding Warm, gentle The first tin
Kaluga Reserve Large Buttery burst Creamy, savory If delicate is not enough

Overnight, packed cold

Orders leave Monday through Thursday before 12PM EST, so no tin sits in a facility over a weekend. Free over $250.

Held at 28–32°F

Colder than the main compartment of most refrigerators. Enjoy within four weeks of the packing date, three days once opened.

Mother-of-pearl, never metal

Metal reacts with the roe and leaves a tinny note behind. Keep the tin on ice and serve cold.

Before you order

Everything that happens after the tin is sealed.

Storage & freshness

Caviar is fresh seafood, not a pantry item. Hold unopened tins at 28–32°F and enjoy within four weeks of the packing date.

Once opened, finish within three days and press the lid firmly back against the surface of the roe between servings. Never freeze it: ice crystals rupture the individual eggs and the pearls turn soft once thawed.

How we ship

Orders leave Monday through Thursday before 12PM EST. Everything ships overnight, packed cold with gel packs in insulated packaging, and arrives chilled and ready to plate. Orders over $250 ship free.

Because caviar is perishable, all sales are final; if a package arrives damaged or warm, write to us and we will make it right.

Serving

Keep the tin on ice and use a non-metallic spoon, traditionally mother-of-pearl. Serve cold.

Blini, crème fraîche, and unsalted fresh bread are the classic accompaniments, and dry Champagne or chilled vodka the classic pours — but a good tin asks for none of it.
