An Introduction

Why this one earns the name.

Golden Osetra is the tin we would open first if we were only opening one. The pearls run golden to deep amber, medium-large and evenly graded, and they hold their shape between the fingers in a way that tells you more about handling than any label can. What sets it apart is length. The first note is nutty and buttery, it opens outward into something faintly oceanic and stays on the palate long after the pearls are gone. That persistence is why Golden Osetra is usually served alone, on nothing, with a spoon and nothing else on the plate to compete with it.

Serve cold and let the tin sit only a minute or two out of the ice. Too warm and the butter dominates; too cold and the finish never opens.

The Pearl

Texture & appearance.

Medium-large grain, evenly sized, in a translucent golden amber that darkens toward the edge of the tin. The pearls separate cleanly rather than clumping, and each one gives a distinct, unhurried pop instead of dissolving. Color varies naturally between harvests, and variation is a sign of a real product, not a defect.
Provenance

The lineage of the sturgeon.

(Acipenser gueldenstaedtii) Sourced from a single supplier under CITES permit, the international convention governing sturgeon trade. Every tin we ship is documented and legally traded. Tins are packed to order and held in an unbroken cold chain from the packing room to your door.
How to Serve

Three considered ways.

I.

On its own

A mother-of-pearl spoon, straight from the tin, with the tin on ice. Nothing underneath. This is how you find out what you actually bought, and with Golden Osetra it is the only serving we would insist on.

II.

With warm blini

Blini warm but not hot, a restrained spoon of crème fraîche, caviar last. Warmth lifts the aroma; too much heat kills the pop. Keep the blini small enough to finish in one bite.

III.

Alongside Champagne

A dry, low-dosage Champagne, well chilled. The acidity and fine bead cut the butter and reset the palate between spoons. Chilled vodka works just as well and stays further out of the way.
