An Introduction

Kaluga Reserve is where people go when they have had caviar before and found it too polite. A hybrid cross of Kaluga and Amur sturgeon, it brings a fuller body, a longer finish, and a distinctly savory turn that the other two roes do not have.

The Pearl

Texture & appearance.

Large, glossy pearls in dark grey to near-black, with a soft sheen rather than a hard shine. They yield smoothly under the tongue instead of popping sharply, which is where the creamy finish comes from. Sizing is consistent across the tin.
Provenance

The lineage of the sturgeon.

(Acipenser schrenckii x Huso dauricus) Sourced from a single supplier under CITES permit, the international convention governing sturgeon trade. Every tin we ship is documented and legally traded. Tins are packed to order and held in an unbroken cold chain from the packing room to your door.
How to Serve

Three considered ways.

I.

On its own

On ice, with a non-metallic spoon. Kaluga has enough body to carry a full spoonful, so be less sparing than you would with Osetra.

II.

With warm potato

A small waxy potato, steamed and split, with crème fraîche and caviar spooned over. The starch and the savory finish suit each other, and it is a more forgiving pairing than blini for a first attempt.

III.

With chilled vodka

Neutral, very cold, in a small glass. Vodka is traditional for a reason, it clears the palate without adding anything, which lets Kaluga's savory length do the work.
