An Introduction

Where to begin.

Kaluga Amber is the tin we recommend to anyone opening their first. Large pearls, warm amber shading to bronze, and the profile is the most welcoming; clean, mildly sweet, without the savory weight of Kaluga Reserve or the long complexity of Golden Osetra. That gentleness is not a compromise. It is simply a different register, and there are people who taste all three and come back to this one. Large pearls also make it the most visually striking of the three, which matters most when caviar is going on a table in front of guests. If you are unsure where to start, start here

The Pearl

Texture & appearance.

The largest pearls in the collection, in warm amber to bronze, with a soft translucency that catches light. They pop generously rather than firmly, releasing all at once. Color varies between harvests and across a single tin.
Provenance

The lineage of the sturgeon.

(Acipenser baerii x Huso dauricus) Sourced from a single supplier under CITES permit, the international convention governing sturgeon trade. Every tin we ship is documented and legally traded. Tins are packed to order and held in an unbroken cold chain from the packing room to your door.
How to Serve

Three considered ways.

I.

On its own

Cold, from the tin, with a mother-of-pearl spoon. The large pearls are worth looking at before you eat them, so serve the tin open on ice rather than plating it.

II.

Sourdough

Thick, fresh sourdough, unsalted butter, caviar on top. The mildness means it will not overwhelm anyone new to it, and the bread gives the large pearls something to sit against.

III.

Soft scrambled eggs

Fluffy, brouillade eggs, caviar spooned over the top while it is still warm. A classic pairing, and the gentlest possible introduction for someone who has never tried it.
