Reading about caviar gets you only so far. The differences between these three roes are real but they are small enough that description does not settle them. You have to put them next to each other. The Flight is one ounce each of Golden Osetra, Kaluga Reserve, and Kaluga Amber, portioned for a single sitting. Taste them in that order and each one recasts the last: the Osetra sets a high bar for length, Kaluga Reserve answers with body, and the Amber arrives cleaner and sweeter than you expect after the other two. Most people come away preferring one clearly. That is the point. It ships free.

Provenance

The lineage of the sturgeon.

All three roes are sourced from a single supplier under CITES permit, the international convention governing sturgeon trade. Every tin we ship is documented and legally traded. Tins are packed to order and held in an unbroken cold chain from the packing room to your door.
How to Serve

Three considered ways.

I.

Taste in order

Golden Osetra first, then Kaluga Reserve, then Kaluga Amber. Going in this order means each roe is judged against a fuller palate than the last, which is what makes the differences obvious.

II.

Keep the table bare

All three tins on ice, mother-of-pearl spoons, water to reset between them. No blini, no crème fraîche, nothing that would flatten the differences you are trying to taste.

III.

Pour one thing

A dry, low-dosage Champagne across all three, or chilled vodka. Changing the pour between roes muddies the comparison.
